What started as a popular Korean-Mexican food truck in St. Louis has grown into seven Seoul Taco fast-casual restaurants with locations in St. Louis, Columbia, and Chesterfield, MO, as well as Chicago and Naperville, IL. Seoul Taco’s mobile beginnings helped the concept quickly gain a following among urban Millennials, who fell in love with restauranteur David Choi’s affordable, approachable take on grab-and-go eats made with fresh ingredients. The menu combines Choi’s mastery of classic Korean BBQ with a fun nod to Mexican street fare in their delivery formats. By designing each location uniquely with the help of local artists, Choi aims to make each Seoul Taco integral to the community—both a place to eat and to meet.
